Cherries of the Coffee tree

Fruits of the coffee tree have received such common name due to their resemblance to the fruits of cherry-tree, though botanists prefer to call them the “drupe”. Green at first, the berries start ripen over several months (in room conditions you can wait even for half a year), becoming yellow by degrees, then red, garnet red, and at last almost black.

The time, when the berries are red, is the best moment for harvesting. Inside the cherry, protected by the “mesocarp” or pulp, there are two small beans separated by a groove. They must be extracted and roasted before they can be used for consumption. Coffee belongs to the Rubiaceous family (Gardenias, Quinquina, Garence), and has a lot in common with Jasmine. The fragrance of the flowers also is very similar to Jasmine.

To receive the best harvest the gardener should keep growing conditions:
Avoid excessive cold, heat and watering.
Some light hours per day.
No strong winds and draught.
